Easy Quick Navajo Tacos

I've recently heard of Navajo Tacos and immediately had to do research. Three things to know: one of Arizona's top dishes, Indian Fry Bread has no yeast, and black olives are added.
I like to cook fast and after comparing recipes I came up with this version. It's super easy and it took about 45 minutes. The end result? Perfect and tasty!
Recipe for Indian Fry Bread
2 cups of all-purpose flour
1 teaspoon of salt
2 1/2 teaspoons of baking powder
1 cup of warm water
- two cups of vegetable oil for frying
Add the dry ingredients to the bowl. Start pouring the warm water and mixing with a fork. Get ready to start kneading! Make sure you have flour on the side as you knead for a good five minutes. Put it back in the bowl and covered for at least ten minutes. Get the oil ready (keep it to medium high).
My trick is to cut your ball into eight and then start to flatten each piece by hand. I had used a cup to shape them into a nice circle.

I cooked 3/4 of ground beef and when it comes to seasoning, I cheated. I bought a taco seasoning packet. The important thing when it comes to seasoning is to have cumin, chili powder/chipotle chili powder, crushed red pepper, and paprika. You need beans! I picked red kidney beans, cooked, rinsed and added once the beef was browned. A lot of recipes suggest green chillies and diced tomatoes. I cheated again. I used Pico de Gallo (most food markets have this ready). The flavor is already there and when you add it to the seasoned beef (don't forget onion and garlic) and kidney beans, it's enough.
I won't give you measurements of onion, garlic. and spices because this is where it gets different. You're the chef! Let that simmer for about 20 minutes on medium heat.
While the beef cooks, fry your bread. Once it's a nice golden color you can flip it. Set up a tray with paper towel so it can soak up the oil.
Once everything is done it's time to start layering. Navajo Tacos have black olives, I skipped it.
I topped mine: bread, beef, more Pico de Gallo. avocado, cheddar, lettuce and sour cream. It came out delicious! It's your taco so feel free to add or omit.
This was my first time having them and looking forward to having them again! Next time I visit Arizona I'm definitely ordering it.
